Ingredients
  

For the soup base
  • 1 pound ground beef
  • 1 small yellow onion diced
  • 3 cloves garlic minced
  • 1 packet taco seasoning
  • 1 teaspoon ground cumin
  • 1 15-ounce can black beans drained and rinsed
  • 1 15-ounce can corn drained
  • 1 10-ounce can diced tomatoes with green chilies
  • 1 15-ounce can tomato sauce
  • 3 cups chicken broth
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon black pepper
For the creamy finish
  • 4 ounces cream cheese softened and cubed
  • 1/2 cup sour cream
  • 1 cup shredded cheddar cheese
Optional toppings
  • extra shredded cheese for serving
  • sour cream for serving
  • chopped cilantro for serving
  • tortilla strips or crushed tortilla chips for serving
  • diced avocado or jalapeno for serving

Equipment

  • 1 large skillet for browning the beef and onion
  • 1 slow cooker 4- to 6-quart works well
  • 1 Wooden spoon for stirring

Method
 

Cook the soup
  1. In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion has softened. Break the meat into small crumbles as it cooks. Add the garlic and cook for 30 seconds more. Drain excess grease if needed.
  2. Transfer the beef mixture to the slow cooker. Stir in the taco seasoning, cumin, black beans, corn, diced tomatoes with green chilies, tomato sauce, chicken broth, salt, and black pepper.
  3. Cover and cook on low for 4 hours, until hot and flavorful.
  4. About 15 minutes before serving, add the softened cream cheese and stir until melted and smooth.
  5. Stir in the sour cream and shredded cheddar cheese until fully combined. Taste and adjust seasoning if needed.
  6. Ladle into bowls and serve hot with optional toppings such as extra cheese, sour cream, cilantro, and tortilla strips.

Notes

Soften the cream cheese before adding for the smoothest texture. Use mild or hot diced tomatoes with green chilies depending on your preferred spice level. Reheat gently after adding dairy to help keep the soup creamy.
