Cook the soup
- In a large skillet over medium heat, cook the ground beef and diced onion until the beef is browned and the onion has softened. Break the meat into small crumbles as it cooks. Add the garlic and cook for 30 seconds more. Drain excess grease if needed.
- Transfer the beef mixture to the slow cooker. Stir in the taco seasoning, cumin, black beans, corn, diced tomatoes with green chilies, tomato sauce, chicken broth, salt, and black pepper.
- Cover and cook on low for 4 hours, until hot and flavorful.
- About 15 minutes before serving, add the softened cream cheese and stir until melted and smooth.
- Stir in the sour cream and shredded cheddar cheese until fully combined. Taste and adjust seasoning if needed.
- Ladle into bowls and serve hot with optional toppings such as extra cheese, sour cream, cilantro, and tortilla strips.
Notes
Soften the cream cheese before adding for the smoothest texture. Use mild or hot diced tomatoes with green chilies depending on your preferred spice level. Reheat gently after adding dairy to help keep the soup creamy.
