Mom’s Cream Puffs

Classic homemade cream puffs with golden choux pastry shells, a fluffy vanilla cream filling, and a light dusting of powdered sugar.

Ingredients
  

For the pastry shells
  • 1/2 cup unsalted butter
  • 1 cup water
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 1 cup all-purpose flour
  • 4 large eggs
For the vanilla cream filling
  • 1 cup heavy cream cold
  • 1 cup whole milk cold
  • 1 package instant vanilla pudding mix 3.4 ounces
  • 1 teaspoon vanilla extract
For finishing
  • 2 tablespoons powdered sugar for dusting

Equipment

  • 1 medium saucepan
  • 1 mixing bowl large
  • 1 Wooden spoon
  • 1 electric mixer or whisk
  • 2 baking sheets
  • 1 parchment paper
  • 1 cooling rack
  • 1 piping bag optional for shaping or filling

Method
 

Prepare the pastry shells
  1. Preheat the oven to 400°F and line 2 baking sheets with parchment paper.
  2. In a medium saucepan over medium heat, combine the butter, water, sugar, and salt. Bring to a simmer until the butter is melted.
  3. Add the flour all at once and stir vigorously for 1 to 2 minutes until the dough forms a ball and pulls away from the sides of the pan.
  4. Transfer the dough to a mixing bowl and let it cool for 5 minutes.
  5. Beat in the eggs one at a time until the dough is smooth, glossy, and thick.
  6. Drop or pipe 12 mounds of dough onto the prepared baking sheets, spacing them evenly apart. Smooth any peaks with a damp fingertip.
  7. Bake for 20 minutes. Reduce the oven temperature to 350°F without opening the door and bake 12 to 15 minutes more, until deeply golden and dry.
  8. Remove from the oven, poke a small hole in each puff to release steam, and cool completely on a rack.
Make the filling and assemble
  1. In a large bowl, whisk together the cold heavy cream, milk, instant vanilla pudding mix, and vanilla extract until thick and fluffy. Chill for 10 to 15 minutes if needed for a firmer consistency.
  2. Slice the cooled puffs in half or make a small opening for piping. Fill each puff generously with the vanilla cream.
  3. Dust with powdered sugar just before serving.

Notes

Bake the shells until deeply golden to prevent collapsing. Unfilled shells can be made a day ahead and re-crisped in a low oven if needed. Fill shortly before serving for the best texture.
