Ingredients
  

For the bites
  • 24 mini phyllo shells
  • 8 oz brie cut into small cubes, rind trimmed if preferred
  • 6 slices bacon cooked until crisp and finely chopped
For the maple topping
  • 3 tbsp pure maple syrup
  • 1 tbsp brown sugar
  • 1 tsp Dijon mustard
  • 1 tbsp pecans very finely chopped, optional
  • 1 tsp fresh thyme leaves optional garnish

Equipment

  • 1 baking sheet or mini muffin pan
  • 1 Small mixing bowl
  • 1 spoon for drizzling glaze

Method
 

  1. Preheat the oven to 375°F. Arrange the mini phyllo shells on a baking sheet or in a mini muffin pan.
  2. Place a cube of brie into each phyllo shell, filling generously without overpacking.
  3. Top each shell with a small pinch of chopped bacon. Sprinkle with a little chopped pecan if using.
  4. In a small bowl, stir together the maple syrup, brown sugar, and Dijon mustard until smooth.
  5. Spoon or drizzle a small amount of the maple mixture over each bite.
  6. Bake for 15 to 18 minutes, until the shells are golden, the brie is melted, and the tops look glossy.
  7. Cool for 3 to 5 minutes, garnish with thyme if desired, and serve warm.

Notes

Use fully cooked crisp bacon for the best texture. Do not overfill with maple glaze or the shells may soften. Prep the bacon, brie, and glaze ahead, then assemble just before baking.
