Ingredients
  

For the pastry shell
  • 1 1/4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter cold and cubed
  • 1 large egg yolk
  • 2 to 3 tablespoons ice water
For the vanilla custard
  • 2 cups whole milk
  • 1/2 cup granulated sugar
  • 4 large egg yolks
  • 3 tablespoons cornstarch
  • 2 tablespoons unsalted butter
  • 2 teaspoons vanilla extract
  • 1 pinch salt
For the fruit topping
  • 1 cup strawberries hulled and sliced
  • 1/2 cup raspberries
  • 1/2 cup blueberries
  • 1/2 cup blackberries
  • 2 tablespoons apricot jam
  • 1 tablespoon water

Equipment

  • 1 9-inch tart pan preferably removable bottom
  • 1 mixing bowl
  • 1 rolling pin
  • 1 saucepan
  • 1 whisk
  • 1 parchment paper for blind baking
  • 1 pie weights or dried beans

Method
 

Prepare the pastry shell
  1. Whisk together the flour, sugar, and salt in a large bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
  2. Add the egg yolk and 2 tablespoons of ice water. Mix gently until the dough starts to come together, adding the remaining tablespoon of water only if needed.
  3. Shape the dough into a disk, wrap it, and chill for 30 minutes.
  4. Preheat the oven to 375°F. Roll out the chilled dough and fit it into a 9-inch tart pan. Trim the edges, prick the base with a fork, and chill for 10 minutes.
  5. Line the shell with parchment and fill with pie weights. Bake for 15 minutes. Remove the weights and parchment, then bake for 10 to 12 minutes more until golden. Cool completely.
Make the custard
  1. Heat the milk in a saucepan over medium heat until hot but not boiling.
  2. In a bowl, whisk together the sugar, egg yolks, cornstarch, and salt until smooth and pale.
  3. Slowly pour the hot milk into the egg mixture while whisking constantly, then return the mixture to the saucepan.
  4. Cook over medium-low heat, whisking constantly, until the custard thickens to a smooth pudding-like consistency.
  5. Remove from the heat and stir in the butter and vanilla. Transfer to a bowl and press plastic wrap or parchment directly onto the surface. Cool until no longer warm.
Assemble the tart
  1. Spread the cooled custard evenly into the cooled tart shell.
  2. Arrange the sliced strawberries, raspberries, blueberries, and blackberries evenly over the custard.
  3. Warm the apricot jam with the water until loosened, then brush lightly over the fruit.
  4. Chill the tart for at least 1 hour before slicing and serving.

Notes

Cool the tart shell and custard completely before assembling for the best texture. For the neatest finish, add the fruit the day you plan to serve the tart. A fine-mesh sieve can smooth the custard if needed.
