Prepare the pastry
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- In a small bowl, stir together the mixed berry jam, chopped berries, cornstarch, and lemon juice until thick and spreadable.
- Unfold the puff pastry on a lightly floured surface and gently roll if needed to smooth the seams.
- Spread the berry mixture over half of the pastry lengthwise, leaving a small border around the edges. Fold the other half over the filling and press lightly to seal.
- Cut the filled pastry into 8 even strips. Twist each strip several times and place on the prepared baking sheet.
- Whisk the egg with the water and brush the egg wash lightly over each twist.
- Bake for 16 to 18 minutes, until puffed, crisp, and golden brown.
Glaze and serve
- Cool the twists on the pan for 5 minutes, then transfer to a rack.
- Whisk the powdered sugar, 1 teaspoon milk, and vanilla extract until smooth, adding more milk only as needed for a drizzle consistency.
- Drizzle the icing over the slightly warm or cooled twists and serve.
Notes
Keep the puff pastry cold for the flakiest result. Use thick jam or preserves so the filling does not run. A little filling leakage at the edges is normal.
