Ingredients

For the baked brie
  • 1 wheel brie cheese about 8 ounces
  • 1/3 cup fruit chutney such as mango or apricot
  • 1/4 cup almonds chopped
  • 1 teaspoon olive oil or melted butter for greasing the dish
For serving
  • 1 box crackers for serving
  • 1 cup green grapes
  • 1 cup strawberries
  • 1 small loaf baguette sliced, optional

Equipment

  • 1 oven
  • 1 small baking dish oven-safe
  • 1 spoon for topping the brie
  • 1 serving plate

Method

  1. Preheat the oven to 350°F. Lightly grease a small oven-safe baking dish or line it with parchment.
  2. Place the wheel of brie in the prepared dish, leaving the rind on so the cheese holds its shape while baking.
  3. Spoon the fruit chutney over the top of the brie and sprinkle the chopped almonds over the chutney.
  4. Bake for 12 to 15 minutes, until the brie is soft and warmed through and slightly jiggly in the center.
  5. Carefully transfer the baked brie to a serving plate.
  6. Serve immediately with crackers, grapes, strawberries, and optional sliced baguette.

Notes

Check the brie at 12 minutes to avoid overbaking. Mango or apricot chutney both work well. Pecans or walnuts can be used instead of almonds. Nutrition is estimated and does not include optional serving accompaniments in full.
