Method
 

  1. Toast the whole grain bread until crisp.
  2. Spread the toast with cottage cheese, then top with cucumber, cherry tomatoes, olive oil, salt, pepper, and microgreens.
  3. Layer Greek yogurt, oats, chia seeds, berries, and sliced almonds in a jar or glass to make the parfait. Add honey and mint if desired.
  4. Warm the roasted potatoes if needed for the breakfast bowl.
  5. Sauté the mushrooms in olive oil for 3 to 4 minutes, then add the greens and cook just until wilted.
  6. Scramble the eggs until softly set.
  7. Assemble the breakfast bowl with potatoes, scrambled eggs, mushrooms, greens, cherry tomatoes, avocado, and crumbled cooked sausage. Season with salt and pepper.
  8. Spread the center of the wrap with cream cheese or Greek yogurt spread.
  9. Top the wrap with smoked salmon, avocado, greens, cucumber, lemon juice, and black pepper. Roll tightly and slice in half.
